    i like to pick the seeds on their stems when they are dry and brown, like in the photo. then, i rub the seeds off their stems into a bowl, and save them in a glass jar.
    if the seeds aren’t completely dried yet, you can save them in a paper bag until they dry, then transfer them into a jar. sometimes i heat them on a tray at 300F until they are a little drier or even toasted. then i keep them in a jar to add to cooked rice, soup, etc.
